How To Make a Marinade

Marinades add moisture, tenderness and flavor to any meat or fish dish – beef, lamb, pork, poultry, fish or seafood.

Just soak the meat or fish in a marinade for at least 30 minutes before cooking to really bring out the flavour and ensure you hold in that moisture.

You can make your own marinade in as little as 10 minutes, try these simple marinades for chicken or lamb :

MarinadeChicken Red Wine Marinade (20 Mins)

  • 2 cups dry red wine
  • 1/2 cup olive oil
  • 1/4 cup Goodall’s Soy sauce
  • 4 scallions, sliced
  • 1 teaspoon Goodall’s Garlic paste
  • 2 tablespoons brown sugar
  • 1 tablespoon Goodall’s Worcestershire sauce
  • 1 teaspoon Goodall’s Ginger paste

Combine all ingredients in a medium saucepan. Let boil for 10 minutes. Allow to cool. Sit the chicken into the mixture to soak for 30-45 minutes.

Lamb MarinadeGreek style marinade for lamb, chicken or beef (20 Minutes)

  • 3 tablespoons lemon juice
  • 1/4 cup olive oil
  • 2 cloves Goodall’s Garlic Paste
  • 1/2 teaspoon Goodall’s Thyme
  • 1/2 teaspoon Goodall’s Oregano
  • 1/2 Goodall’s Bayleaf
  • salt and Goodall’s Pepper to taste

Combine all ingredients and mix well. Small meat cuts should be marinated for 3-4 hours, larger cuts (roast or leg of lamb) should be marinated for up to 8 hours (ideally overnight).
