Method :
- Preheat oven to 200 degrees C.
- In a large bowl combine the sieved flour, baking powder, salt and ground cinnamon. Stir in the sugar and then make a well in the centre of the mix.
- In another bowl beat the egg with a fork, stir in the milk, melted butter and chopped apple.
- Then pour all of the wet ingredients into the dry ones and stir until just combined.
- Spoon immediately into your muffin tins, sprinkle with brown sugar and bake in the oven for 20-25 minutes. The tops of the muffins should be nicely browned and they should be springy to the touch.
Leave to cool a little before eating – they are amazing warm from the oven though and great for kids lunch boxes!

- 250g Self raising flour
- 1 tsp baking powder
- ½ tsp salt
- 1 & ½ tsp Goodall’s Ground Cinnamon
- 110g Granulated sugar
- 1 egg
- 150ml milk
- 100g melted butter
- 180g of finely diced apple
- 2 tablespoons of brown sugar for dusting
