Carrot Cake with an Orange Cream Icing

Instructions
- Preheat the oven to 150 degrees C. Line a loaf tin with greaseproof paper. Beat the eggs in a big bowl until light and fluffy then add the oil, sugar, carrot, raisins and chopped nuts.
- Weigh out the dry ingredients and mix together thoroughly so that the spices and evenly distributed the sieve the flour mix into the wet mixture.
- Pour the cake mix into the lined loaf tin and place in the oven at 150 degrees C for and hour to 11/4 hours or until a skewer inserted into the middle comes out clean.
- Allow to cool in the tin completely before icing.
- To make the icing beat the sugar and cream cheese with an electric mix for a few minutes until the sugar has been thoroughly mixed in, then add the grated zest of an orange. Keep a little of the zest back to grate directly over the finished cake as decoration.
- Put the icing on the cake and smooth out with a palette knife, then grate extra zest over if required.

- 300g grated carrot
- 90 g of raisins
- 80g of chopped walnuts
- 180g self raising flour
- Pinch of salt
- ½ tsp bicarbonate of soda
- 1 tsp Goodall's Cinnamon
- ½ tsp Goodall's ground nutmeg
- 1/2tsp Goodall's mixed spice
- For the icing
- 250ml cream cheese
- 30g Icing sugar
- Zest of one orange

Hi,
Just wondering when you are to add the sunflower oil? I went to make this last night and had to dump it as I thought I would mess it up by adding the oil at the wrong time,

Just add it when everything else is going in it is the same as adding butter it just lubricates the whole thing. Beat the eggs first with the sugar then add everything else in together. Good luck! It is my favourite recipe. It works every time.
