Instructions
- Season the steaks and place them on a preheated frying on a high heat for approximately 4 minutes on each side. Take off the pan and place on a baking tray in the oven for a further 10 minutes for medium cooked steaks.
- Meanwhile pour the wine into the hot frying pan to deglaze it. Stir the wine around the frying pan to gather all the juices together. Cook the wine until it has reduced by half then add the mustard, Worcestershire sauce,Yorkshire Relish, chilli and sugar. Add the crushed peppercorns at this point also and mix around the pan to cook them all out. Add the cream now and mix everything together. Turn the heat down to a gentle simmer.
- Take the meat out of the oven and use the juices in the baking tray to add to the beautiful sauce that you have created

- 4 fillet steaks (thickly cut)
- Salt and pepper
- Olive oil for frying
- 2 teaspoons of roughly ground black pepper
- 1 Teaspoon of Wholegrain mustard
- 1 teaspoon of Goodalls’ Garlic Paste
- 2 teaspoons of Goodalls’ Worcestershire sauce
- 2 teaspoons of Goodalls’ Whole Black peppercorns – crushed in a pestle and mortar
- 2 teaspoons Goodall's Yorkshire Relish
- ½ teaspoon of sugar
- ½ teaspoon of Goodalls’ chilli paste
- 100ml white wine
- 250ml of single cream
