- Heat oven to 200C/fan 180C/gas 6. Melt the butter, sugar and syrup in a pan. Mix the flour, bicarbonate of soda and ground ginger into a large bowl, then stir in the butter mixture to make a stiff dough. If it won’t quite come together, add a tiny splash of water.
- Draw out the star shapes on baking paper and then cut out those templates for the star shapes. You will need four large star shapes and 3 each of stars in decreasing sizes. You can make the tree as big as you like but bear in mind the base stars will have to be quite large. Put a sheet of baking paper on your work surface and roll the dough to the thickness of two euro coins on top of each other.
- Place the finished stars on baking paper and into the oven to bake for approximately 12 minutes. When you take them out of the oven they may have slightly changed shape so reapply your template and cut around it again while hot to give nice clean lines to your stars.
- Leave to cool thoroughly before building your tree. Make up some icing using water and icing sugar and add colouring to make various colours. Use the icing as glue between the layers of tree. Once the tree is assembled you can use a piping bag and any sweets you can get your hands on to decorate your tree anyway you want to.
