Instructions
- Blanche green beans in a large pot of well salted boiling water for 2 minutes until bright green in colour and slightly tender.
- Drain and shock in a bowl of ice water to stop from cooking.
- Heat a large heavy frying pan over medium heat.
- Add the oil and the butter.
- Add the garlic paste and gently fry until fragrant for about 30 seconds.
- Turn up the heat and add the beans and continue to fry until coated in butter and heated through (about 5 minutes).
- Add lemon zest and season with salt and pepper.
