Spiced Fruit Parcels

A tasty dessert, these can be prepared in advance and then 'cooked' on the barbecue to heat the fruit nicely.  Use foil to make the parcels. If liked, line the inside of the parcel with a layer of baking parchment.

Ingredients

  • 2 bananas sliced
  • 4 peaches
  • 2 eating apples
  • 4 plums
  • Juice 1 large orange 
  • Sugar to sweeten
  • Pinches of Goodall's nutmeg
  • Pinches of Goodall's cinnamon
  • 4 pieces of foil about 25cm (10") square and the same of baking parchment.

Method

Place the shiny side of the foil upwards and lay the piece of parchment (if using it) on top.  Slice the fruit, discarding stones and divide between the prepared squares of foil.  Dribble the orange juice over, sweeten with sugar and flavour with pinches of the nutmeg and the cinnamon.  Close the parcels.  Cook until heated through.  If liked serve with cream, ice cream or fromage frais.
