Ciabatta Pizzas
Traditional ciabatta, has a long, flat, vaguely shoe-like shape (ciabatta is the Italian for slipper). It is available in various sizes. Toast it in the oven, then split in two and use it as a base for a delicious home made pizza.
Ingredients
Goodall’s olive oil
½ small onion, chopped finely
1 clove garlic, chopped
50g (2 oz) button mushrooms, quartered
½ - ¾ tin of chopped tomatoes
1 teaspoon tomato puree
Goodall’s salt and Goodall’s ground black pepper
½ teaspoon sugar
¼ - ½ teaspoon of Goodall’s oregano
¼ - ½ teaspoon Goodall’s thyme
About ¼ teaspoon Goodall’s nutmeg
Approximately 75g (3 oz) grated cheese (a mixture of Mozzarella and cheddar)
Method
Heat the oven to 200°C, 400°F, gas 6.
Put the ciabatta into the oven for a few minutes to crisp it. Remove and slit in two and place on a baking tin with the cut sides facing upwards. Dribble a little olive oil over the cut surfaces.
Put a tablespoon or two of olive oil into a pan and fry the onion and chopped garlic until soft. Then add in the mushrooms and fry until soft. Stir in the chopped tinned tomatoes and tomato puree. Season with salt and pepper and flavour with Goodall’s thyme, oregano and nutmeg
Spoon this tasty mixture over the ciabatta and scatter the grated cheese over the top. Put into the oven for about 15 minutes or so until the cheese melts. erve hot with a tasty side salad like cabbage and pineapple salad.
